Migrate to Stripe Checkout V2

Checkout V2 is the updated version of the checkout flow you're using currently, and I believe V1 will be deprecated soon. It's clean and supports more security features, such as automatic Apple Pay integration and 3D secure (which is part of an upcoming liability shift).
